Shortly after the 2011 Paella Cooking Class here at The Spanish Table in Santa Fe, NM a lovely couple shared with me their experience of cooking a paella over coals in an outdoor fireplace with a gathering of friends. They used rabbit as well as a variety of seafoods, green peas, and the necessary ingredients from the store such as piquillo peppers, saffron, rice, and pimenton or smoked paprika. That’s the beauty of paella. No two have to be alike! Each paella has the personal touch of the cook, a dimension of personality in both flavor and appearance.
